Ciao Thyme celebrates first year with expanded hours, exciting plans

Ciao Thyme, the popular restaurant and theater-adjacent dining destination in downtown Little Falls, is celebrating its first anniversary this month. Owner Susy Prosapio (who co-owns the restaurant with her husband, Phil Prosapio) and Executive Chef Scotty Stocco reflected on the restaurant’s journey, the challenges they’ve overcome and their vision for the year ahead.
Prosapio and Stocco first conceived the idea for Ciao Thyme over 15 years ago, envisioning a space where patrons could enjoy a meal and then seamlessly transition to a show next door at The Falls Theatre. After a long process, they were finally able to purchase the theater building in 2022. The Falls Theatre had its grand reopening ceremony on Oct. 9, 2023, with Ciao Thyme welcoming its first guests on Nov. 22, 2023.
“A year ago today, I was still sweeping sheetrock dust off of some of my equipment,” Stocco said. “If you were to ask me if we were going to be open for lunch and dinner six days a week, one year ago today, I would have told you to go away and to quit bothering me.”
